Are they supposed to ask about each symptom listed on a mental health eval?

Every exam is different depending on the medical evidence the examiner has available. So, it's hard to say exactly what they'll ask.

If anything, the examiner has to ask about the symptoms that pertain specifically to you.

Look at the page that has all the symptoms listed. Go over it and check the one's you know you have had and continue to have.

No.  The docotor is supposed to have reviewed your file, so he wont have to ask redundandant questions.  If there were errors in your file, unfavorable to you, this may not be a bad time to point them out.

Good info from @broncovet

Due to the wide ranging symptoms of every possible MH disorder, the DBQ is pretty much a catch all to cover everything.
